Insure your car for a value, just like you'd insure art, property, or anything else. Provide receipts for everything you've done to the vehicle, and get it insured for a total value. IMHO the best agency to insure a vehicle with if you want to make sure you get your money's worth is State Farm. If you provide everything up front with them, you're golden.
I had State Farm when I wrecked one of my 510's. I gave them the receipts for all the work I had done to it AFTER THE FACT. They still gave receipts and market price on the car, and they let me buy it back. When all was said and done, I had all of my parts, and $4500.
I can't wait to talk to them about getting my car and renters insurance with them. It'll be good to have a multiple policy discount.
