Whats involved in installing a new head gasket in my 1991 240sx Dohc?

Depends on mileage. If high miles you may consider timing chain replacement at the same time. The first thing you need to do before you take the head off is set the timing at tdc #1 cyl. The next step is to make sure you have a factory service manual if this is a first for you. Generic man. can get you in trouble because they have little to no info that you need. The rest is just taking your time and don't rush it. Check out the man. and go through it and familiarize yourself with the job. If the headgasket is blown you will need to send the head to a machine shop to check it for being warped,which means having it resurfaced at the least and maybe the valves recut.
