Gaskets, you need a new gasket for anything you plan to remove. This means plenum gaskets (all 8), you also may want to consider new FI gaskets (go in the lower intake manifolds). If you remove the lower intake manifold (maybe a good idea, I seem to be the only one to recommend this if your replacing a FI and/or KS) you need the metal crimp seal things that go with that. As for hoses its a case by case basic, Joe's kit doesn't even include everything it *should*, if you only had his kit you would end up SOL with one or two hoses you still needed
Go to the dealer, ask them to print out ALL of the hose diagrams (EGR, Water hoses, etc). You will end up breaking plenty in the removal, simply circle or highlight what you dont have prepared already and tell them to order it in, 1-5 days later they should all arrive ready to pop in. You *could* order them from Joe, but it could take more then the 1-5 days. Not ALL hoses have to be replaced, but it is a pretty good idea. What happens is they get VERY hard and brittle, snap with ease, and just dont seal well after they expand over the years. It is actually pretty surprisingly expensive to get new hoses and gaskets, they all have bends that are just over non OEM tolerance, so you have to get the real Infiniti hoses or the hose crimps and you might as well not have even put hoses on at that point (OEM hoses, some have aluminum or other metal on the inside to shape them, those are the ones that you could never improvise, some other hoses you could... but its difficult and iffy)
