i have a brand new radiator and thermostat yet car is still overheating.

When bleeding the sytem with the bleed valve:

fluid will come out of bleed valve whilst radiator is not full, this is when hot or cold and also front raised or not.

car overheats and yet bottom hose is still cold which would be a defective thermostat and not just an airlock?

my question is what is causing both of these? fans are working mint as.

ps: dont want to pull thermostat out to test in hot water unless i know thats what it is as ive snapped a bolt

Someone recently had similar issues to yours:

If you didn't use an OEM thermostat, that could be your major stumbling block.
If you think the lower hose is airlocked, squeeze it and see if anything bubbles though the radiator filler neck.

PS: pour the coolant in slowly when refilling. It helps with the air entrapment issue
