I searched the web and can’t find a good answer here on if this will actually be ok. My Rogue rims have an offset of 35mm. I found a mint set of 17x7, same bolt pattern but have an offset of 45mm. I’d like to put a dedicated set of tires specifically for summer use only. Will the offset difference cause any issues? My tire size is 225/65r17 and for sure wanna stay with that size. Any help is appreciated as I’m a dummy when it comes to rims.

Going 10mm positive will just widen the track by 20mm, like putting 10mm spacers behind the stock rims. So you definitely won't have any interference issues with the body. The outside edges of the wheels on a gen2 are pretty close to the edges of the wheel wells, so your tires may protrude a few mm past the side of the car. Other than that, I don't see that it should cause you any problems.
