My ignition coils keep burning out, the same three all the time. Any ideas of what is causing this?

That is a very weird and very expensive fix if you buy them new. How far are you going on the coil packs before you start to misfire?

Hopefully one of the Techs can jump in on this one. This isn't a common occurance. I changed my coil packs at 135K miles and they weren't really bad.

Are the old coil packs that are coming out ruined due to leaking valve covers & oil seepage?

The coils, once I change them last a couple of days to a week approximately. Not due to any leakage

Well first off, its only 3 that burn out? All on the same side? It looks to be an isolated issue, I would look at the spark plugs, make sure there is nothing wrong there, and then check the harness for any breaks, shorts, damage. They may be spewing out voltage in an unregulated manner, leading to a bad ECU. what have you done lately to the car?
