Idle and power issue

So I recently replaced the cam cover gaskets on my 1990 300zx n/a and put the car back together and am getting a weird idle and low power, the car struggles to start out of first I pulled the vacume line on the egr system so it would not rout fumes back through the system would this cause this problem or would it be something else? Please help.

Weird idle and low power sounds like a vacuum leak was introduced somewhere. It could be other things, but maybe start there based on the work you've done. I'd put the EGR lines back for a short while. Then I'd check the bolts of the work I'd done to the gaskets. Then I'd fire it up and check for issues, if it stilled had odd idle and response, I'd spray carb cleaner around the engine to check for more vacuum leaks.

Talking about valve cover gaskets? If so, then there were a ton of vacuum hoses and everything that you disconnected in the process of removing the plenum. There's also the PCV valves. Those hoses are really brittle and can break super easy as they get older. It definitely sounds like a vacuum issue though.

You said you pulled the vacuum line to the EGR. Did you cap that hose or just disconnect it? Cause if you just disconnected it, that's your issue.
