Anyone know what this is/does (Can't find it on the FSM)? It sits above the oil filter and has coolant running through it. Just wondering if I can bypass this or if it's really important

that's the stock oil "cooler" - it normalizes oil temp. not very effective.

you can upgrade it with better flowing one there pretty easy to install
