Im going to mock up a turbo manifold and i was unsure what stainless steel tubing to get? thickness.....

Schedule 30 will do.

*edit* What I meant was Schedule 40, which thankfully someone identified for me. I have absolutely no typing skills at all and will choke myself accordingly as punishment. WD is the man

It all depends on the type of material for the intake, the weight the runners will support and design all play crucial roles in thickness.
