to my knowledge, Stillen or custom is the only way to go for now. (available here in the US).

I would go custom.
I did and it sounds deep with a nice rumble.

Cheapest and simplest route would be to eliminate the 2 resonators and replace them with a straight pipe. Shouldn't cost more then $200 from most exhaust shops.

From what I've been reading, most guys have gone either full custom or they buy the stillen exhaust and then say it isn't much louder then stock, and then they proceed with the resonator deletes and all is well. Well, why not just stick with the stock muffler and just eliminate the resonators?

I've done this on other cars I've owned and have been pretty happy with the results (mild improvement in sound with zero drone) but haven't found anyone that's done it on the M37/56.

Just do a muffler delete. I've done it on my M56 and my old G37 sedan. Sounds amazing with the vq37 and the vk56. They put such good resonators on these cars that the mufflers hardly need to do any work. I did the "washer mod" on the M. Look it up. All you need is some washers from Home Depot.
