I'd get oil pressure, oil temp, water temp (oem gauge sucks), and boost at the least. A/F is only useful if you have a wideband sensor. Otherwise dont waste your money. Other guys will most likely argue my thinking, but that's what I would go for.

Everybody on here will tell you something different.

I run boost, water temp, and oil pressure below my radio in place of the pocket. I think that is a good starting point.

I personally am doing water temp(stock gauge really does suck), oil psi, and boost gauge. I'm also going to pick up a wideband sometime too. Yes widebands dont exactly have a long lifespan if used everyday, but typically people put them in to tune the car and get it running right, then pull it out until the next time they need to retune it.

ive put close to 40k miles on my wideband and it still reads fine and a replacement wideband sensor is 50 bucks.

Boost gauge obvously and I would say oil pressure is very important, its saved my motor on two different occasions. I also have oil temp so I know when to lay off after some spirited driving when the temps get hot.

Autometers electric guages are crap. Very unreliable. Their mechanical ones are ok, but if you want to run electrics, I'd go with greddy, apexi, hks or equivelant.

Brands of gauges that are good: Defi, Greddy, Blitz, Apexi, most Autometers are alright, from experience Megan Gauges are pretty good, Omori, and VDO

Stewart Warner gauges are good. They have their new compact series out that are 1" diameter, but they're a bit more expensive than the normal ones. It's probably a good idea to get a boost/vacuum gauge, mechanicals typically work fine, and 52mm or 60mm is the standard sizes.
