I'm thinking of getting hydro dipping to the wood paneling. What are thoughts on this? How durable is this stuff? The way I'd like to do it, I'd like to keep the silver strip at the bottom of the paneling just the way it is, is that possible? And last, I remember there were problems with the paneling coming off and people having problems with getting it to stick back properly, any new insight into getting the panel back on permanently once removed?

The polished strips on the bottom are removable from all panels. All the panels screw on, none of them "stick" on so I do not know where the problems are there.
Hydro dipping is very durable from what I have seen and my buddies have done (installers). I covered all of my trim in vinyl:

Ah, the veneer peeling. Can't help you there, I had the aluminum trim.
