hvac wired to a single switch

Im looking to remove all HVAC controls, so i can relocate my switch panel to the din above my head unit. Im putting my wideband/ boost in the center vents where the panel was before. With this being my daily, and winter coming fast, i want to at least have ny defrost so i can see. How can i set the blower to permanently blow in the defrost position only, on high, and just have one switch for on/off?
