I went around to a few autobody shops and each estimated 1500 - 3K to repair the rust.... so I am thinking about touching it up myself a little, and installing some fender flares...

However, my car is bone stock height and original rims.... so I dont really want a wide body fender flare... should I just install one of the rubber or universal ones that come with the 3m adhesive? or will the 350z ones I found fit on my G?

Do you have a picture of what the rust looks like?
Those flares look rough... especially the huge gap where it goes over the rear bumper area.
