How to drain Powersteering Fluid?

I have a 93 240sx, my powersteering fluid is very very old and want to get rid of all the old fluid and fill with new. I've heard that you can accomplish this by pulling one of the hoses that connects to the hard line and this will gravity drain while you keep topping the fluid in the resevoir until its all new fluid.

Is this correct? Is this done with the engine on? Front lifted?And main question, which hose to disconnect? Is it the one that comes out of the powersteering pump?
