how to check water temp sensor

how do i check the temp sensor, ie what should it read at waht temps, etc. i couoldnt really find much on it in the FSM.

also, I keep getting evap controls codes. is there any way to remove and/or bypass them and keep it from throwing a code?

There should be a graph in the FSM that will tell you what the resistance:temperature ratio should be. I'm not sure where it's at, but i've seen it before. You've got me on the last one...
