I have a 03 6 speed with 107,XXX miles on it and am unsure of the last time it has been changed, I have owned the car since it had 68,XXX miles on it. I tow a seadoo with it during the summer months so it will be getting changed any ways, but I would like to know how often it should be changed. Nissan quoted me at about $180.00 does this soud right or should I look around for a better price.

The fact that you are towing a trailer, it must be replaced every 30K miles or 2 years, whichever comes first. At 107K and without knowing if any replacement done prior to 68K, it's probably way overdue.

Ya I figured that I was well over due. Should I also have the spark plugs changed at the same time. I could do this my self but I have a feeling the 3 hidden plugs will be a pain to access?

The plugs are rated up to 105K miles. But some owners replace them at 60K or 90K miles. So if you have a maintenance record for that car,it's your choice to defer it. But if you do have misfire or lousy acceleration, then go for it.
