How is Inifiniti when it comes time for warranty work and you show all your records and receipts. I have a Nissan titan that I do all the service on except transmission flush. I scan in my receipts and keep everything in a spreadsheet. Nissan takes my records without any issues. I'm hoping Infiniti is the same way.??

Not sure how they are about it. Just keep every receipt you do on the maintenance!! That will be your only defence if they deny a warranty repair due to lack of maintenance. I cant see them telling you that you cannot do your own maintenance if you want to keep your warranty. The only thing I will have them do is the trans fluid change/ refill (No FLUSH!), rear diff fluid change, brake fluid flush, power steering flush (if it is even needed), and coolant flush. I would do the trans fluid drain and refill if I knew it was fairly simple and didn't require the fluid to be extracted from the trans instead of drained. The oil changes, air filter (I'll be changing to K&N when the air filter needs replacement), all in cabin HVAC air filters, brake jobs, and super charger install (Yeah...I wish!)

How is the rear diff? Is there a drain or does it have to be extracted?

There is a drain plug and a fill plug. You will need new washers fro both plugs. It takes under 2 quarts of 75W-90. Also, make sure to loosen the fill plug first; it would suck to drain the gear lube and have not way to fill it again.
