How Do I wire Gauges for a new cluster

Hello I would like to make my own gauge cluster I found all the gauges I need. How do I wire or plug the gauges into my existing harness?

I also need to know which fuel level Gauge I need to purchase it talks about Ohms Empty and Ohms Full I do not know anything about these

For a Water Temp gauge which should I use 140-280 deg.F, 120-240 deg.F, or 100-250 deg.F
