Hooking up aftermarket stereo unit?

Hey everyone,

First time using these forums and first time ever modifying anything car related; as a computer geek I have had no experience with cars and as a result, have no idea where to ask these questions or where to look. I got a Parrot Asteroid Smart over the holidays and didn't know installing it into my 2008 Altima Coupe was going to be so complicated. My only real issue right now is taking the current set of wires/connectors in my stereo and adapting them to the harness provided with my new stereo. The back of the factory stereo looks like this [here].

I have no idea what the middle cable is for, I haven't noticed any changes to any functions when unplugging it; everything on the radio works, steering wheel controls are fine, etc. If anyone has any information on what it does and if I need it, that'd be really appreciated. The antenna cable is easy enough, a simple antenna cable converter [here] will adapt it for the parrot asteroid. The problem is with the main cable, with pin out [here], and how I'm going to find some sort of cable harness with that connector on one end and two ISO (I think that's what they're called?) connectors on the other end so that it fits into the group of cables that was provided with the parrot asteroid, shown [here].

So, is there a specific part I can buy to do all this converting? Or should I buy something like these two parts, [here] and [here], and manually splice the corresponding wires together based on the pinouts for the current stereo connector and the parrot smart diagram on the back of the kit? On top of this, how do I convert the three wires in the current connector for steering wheel radio controls to a piece like [this], which would plug into the connector on the back of the parrot. Is my only option there to buy an expensive adapter like [this], and use that to convert the steering wheel controls?

At this point that's the only thing I need help with, I've been able to find enough videos for now on how to disassemble the interior of the car so that I can run usb cables, the microphone, etc. through the cabin discreetly. I've tried searching through this site but I've never done anything like this before: I don't know where to begin, what to search for, and what the names of certain parts are called. Any information you could provide would be extremely helpful.
