Some other ghettofab methods that have worked for me before:
Take a chisel and cut a shallow slot into the head of the bolt, and use a flathead to screw it out. Oil pan bolts aren't torqued that hard, this method may work, but be careful how hard and deep you chisel the bolt's head. You don't want it to break off.
If the bolt's head is really stripped, sometimes you can get away with forcing the next size smaller socket on the bolt (i.e. 9mm instead of 10mm) or trying an English unit socket of slightly smaller size than metric. Problem is, you may find the bolt head jammed in the socket, but at least you'll get it out.
