What would cause my heat to blow cold air unless the thermostat is set to high and the fan on full?

Many things can cause this fortunately Nissan put a good diagnostic system in all new cars for HVAC problems, See how to troubleshoot it in the service manual: http://Nicoclub.com/FSM

It could be low coolant, bad thermostat, or plugged heater core thats what I would check.

You also might just have air in the heater core. Often when that happens you'll be able to hear a liquid sloshing noise when stopped.
