headlight wiring question

ive done alot of searching and found nothing. ive just completed a koukie conversion on my zenkie but ran across a little problem. the old headlights have three wires for the main headlight but the new ones have two. which one do i hook up to just get low beams or can i have low and high beams, you know have my cake and eat it to. anyones help is greatly appreciated.
