I'm in the process of installing a SR in my 90 240sx. I want to go through it with new gaskets and seals. I guess the question is, should I go with aftermarket headgasket? What thickness should I get and so on.

If you can afford it, go with the aftermarket head gasket. The thickness depends on how much boost you plan on running. I purchased a Greddy 1.2mm gasket for my rebuild, with the intention of one day making between 300-350whp.

If I plan on 300hp which should I get 1.5, 1.2, or 0.8mm.

The thicker the headgasket the lower the compression ratio, the slimmer the higher the compression. 1.2mm is stock, I wouldn't go smaller than that if you plan on boosting more.
