if your only doing the exhaust manifold...you wont even have to remove the head...only if you want to go to the trouble with all that...now if you mean exhaust manifold gasket...i belive the hotshot kit comes with a set of new gaskets

I ordered from Enjuku and got all the gaskets I needed to install my header. Only issues I had were the dummy cat gasket was too thin so I had to double up on that with a felpro gasket. The other issue was my header came in a box all torn up and opened. But luckily the header was wrapped well and there was no damage.
You can do the header in half a day with the right tools. Hardest part will be to remove the EGR bolt on the exhaust manifold side. Good luck.

Exhaust manifold gasket is 4 pieces...one for each port.
You'll need 4...they should be $4-5 each. Cat gaskets are in the same price range...or a bit cheaper. They are just stacked thin sheet metal gaskets...where the manifold gasket is a composite metal gasket.
