Why can't it look like whatever appearance best suits its purpose? Which is exactly the reason humans look the way they look.
And, to approach it philosophically, if we're looking to create something new and wonderful, shouldn't we be striving specifically to create something DIFFERENT from ourselves? Why would we want more of the same? Why not add diversity to the universe?
I think the answer is pretty simple: fear.
Most people are initially scared and apprehensive of something that doesn't look like themselves, so a robot with AI, that looks nothing like a human being, will scare and intimidate people.
The more it looks like us, the more accepting it would be.
Now I realize that's a generality, and some of us would welcome something that is different from ourselves, but most people need to be in a comfort zone.
If mankind ever meets intelligent extraterrestrial life, and they happen to look like giant spiders or something, what do think the first reaction would be?
We'd probably be shooting at it.
Conversely, if that alien life form is humanoid, we would tend to trust it, even if it turns out that they want to exterminate the planet.
It's human nature.
First impressions matter, even with robots.
