For that matter you could do it yourself with a good can opener and hack saw.
But because of the loss of frame structure, real convertibles need a beefed up frame in order to prevent flexing and all the problems that would cause. This is a major factor that adds to its cost. So I would never give credibility to a shop that would chop up your car for you unless they have the capability to stiffen the remaining frame, which is unlikely.
