Not sure yet, oil is sooo expensive, but we'll inject one turkey with Texas Pete/Italian Dressing and the other with Cajun Butter marinate....might do them both in the Big Easy.

BRINE YOUR TURKEY!!!

I did a 22lb no-name turkey last year. It was my first turkey (I'm a pretty decent chef, but roasting large animals isn't my forte). Anyways, my wife and I bought a brine (salt, water, and seasoning-can also include sugar) and the turkey came out PERFECT.

The outside was a beatiful golden brown (with a slightly reddish tint to it). Both the white and dark meet were flavorful and moist (none of the dryout your mouth crap). The brine is also supposed to help with gravy because it keeps everything moist.

The best part:

22lbs of turkey cooked in 3.5 hours!!!

Just be sure to follow basic brining rules. Do a google search, you can find them everywhere.

Fearing that he'd hurt Kayla , Robert quickly opened the door to the Freezer. The parrot calmly stepped out onto Robert's outstretched arms And said "I believe I may have offended you with my rude language and actions. I'm sincerely remorseful for my inappropriate transgressions and I fully intend to do everything I can to correct my rude and Unforgivable behavior."

Robert was stunned at the change in Kayla the bird's attitude. As he was about to ask the parrot what had made such a dramatic change in her behavior, when Kayla continued, "May I ask what the turkey did?"
