Welcome aboard! You got a great car - the EX35 is awesome (especially in black)!
That gurgling sound is simply air in the cooling system. With the engine cool, remove the radiator cap. Top off the radiator with distilled water (not coolant). Start the car, turn the heater on full blast, highest temp) and let it run for a minute - monitor the fluid level in the radiator, and rev engine several times. Also make sure the overflow reservoir is at "max" (also with distilled water). Give the upper hose a gentle squeeze to "burp" any air out. Put the radiator cap on before the engine reaches operating temperature and go drive normally.
When you come back, let it cool, and repeat the above. You'll notice the reservoir is lower (most likely). You MAY have to do this several times, but you'll get all the air out.
NOTE: If you have a cracked overflow reservoir (or the hose leading to it from the radiator), replace it.
The sound can be annoying, but if the radiator and overflow are full, she'll eventually purge all the air all by herself.
