For slots (video type), as long as the Casinos are licensed the random number generators contained within are tested by the Nevada Gaming Commission who are probably the toughest group just ahead of New Jersey. All new machines have to be approved prior to being placed on site. That said machines can be a little bit off the center line but over their life are suppose to prove out. They will and can be moved around the casino so the best bet for ones that are a little bit better is to play in high traffic areas near the end of rows. Some players will play two machines at once to see if one is a little warmer as often times these machines will be separated.
In the case of video p0ker look for the payouts and play the ones with the highest payouts for Royal Flush, Full House, Flush, and two pairs. Video p0ker is unique in that it gives you a payout table that you can play against. Some casinos will only have ones on the lower end of the scale, others an average mix, still others on the high end as sort of a draw to their other machines that are pretty much random.
For example a Royal Flush with 4700 credits, Straight Flush with 1000, 4 of a kind with 200, FH with 40, Flush with 40, Straight with 40, 3 of a kind with 15, 2 pairs with 5, and Jacks or better with 5 equal a machine that will payout at 101.1%.
One with Royal Flush - 4700, Straight Flush - 250, 4 of a kind - 125, FH - 40, Flush - 25, Straight - 20, 3 of a kind - 15, 2 pairs - 5, and Jacks or better - 5 only equals a payout of 84.7%.
Play the top amount that makes sense. If you plan on winning you will see in the payout tables that the difference between a bet of 1 credit and that of 5 is typically 5 times as much with the exception of the Royal Flush. In both examples above of real machines a single credit win shows a 250 payout while a 5 credit win is 4700 or 18.8 times as much. However you will see on some machines even more credits can be bet without any change in the statistics on the top end. Always play towards a hand that will give you the highest amount based on statistics and never keep a high card simply to keep it as this is the strategy to play at the table not in competition with a machine. I have a group of players that tend to follow some variation of the following rule. Be willing to lose everything you come in with (so only come in with what you are willing to lose). Play all the way down or until you have 150% of your money you came in with. Pocket what you came in with and play with the 50% until you either lose it or you are up at least 200% of your initial seed. Then go home.
If a club has a rewards/players card of some sort always get it as this can really change your odds when it comes to adding in discounts for food and so on. If you don't want mailers be careful about supplying an email address.
