Does anybody know all the gaskets and seals that would need to be replaced when swapping cams, valve springs and fuel injectors on the VG30DE? Or just check if I"m missing anything...so far i got

2 TB gaskets2 O-rings for fuel balance tube1 IACV gasket6 Injector O-rings6 Injector Insulators2 intake manifold gaskets4 front oil seals for cam shaftsThere are some gaskets listed at the top of page EM-26 in the Service Manual, but I'm not sure what they are.I also don't think the cylinder head gaskets will be necessary either, right?

Those look like valve cover gaskets and ornamental cover gaskets. You're asking because the manual says to use a liquid gasket on the valve covers? Maybe a mistake. The ornamental cover gaskets only need to be replaced if cracked. The manual says to replace the cylinder head gasket. I'll be honest and say I don't always replace everything the manual recommends, but when there's this much labor involved, it might be a good idea.
