I heard that its a good idea to remove the o2 sensors for the first start up. Something about any cleaning products or solvents you may have used to clean the manifolds with could potentially break the sensors. Is this true?

Also should I use a specific oil during the break in process and what should that process be?

OEM rebuild with the exception of cp pistons, bc springs, cosworth HG, and acl bearings.
