Pretty much any fluid these days is decent. Technology has come a long way. Unless you're racing/auto-x'ing the car, as long as you maintain proper change intervals, you'll be fine.
Personally, I use the following if I don't have the dealer use OEM fluids:
Oil - Mobil 1 5W-30...but Castrol is good as is AMSOIL. I use the NAPA Gold filter.
Transmission - AMSOIL
Brakes - Pretty much whatever is available although I do like Super Blue Racing Brake Fluid
Power Steering - You can use ATF fluid here...so again AMSOIL would be my choice
Coolant - You can pretty much use either Toyota, Honda or Nissan OEM. The only difference is color (Toyota = Red, Nissan = Green, Honda = Blue). They are all the same formula (no silicates, etc.)
I run a maintenance dose (2 cap fulls) of Seafoam in my oil at every change and change the oil and filter every 5k (overkill). Got the car with 32kmi and now have 133kmi and haven't even had a check engine light in that time span. Car purrs. transmission fluid/differential fluid and coolant has always been changed by the dealer at 30kmi intervals so I haven't used any of the ones above but those are the ones I used on my Maxima (which wasn't dealer serviced).
