I think it's kind of disappointing how few phenomenal, outstanding bassists there are in even great music. It's not often you hear a song and think "Wow, that bassist is really damn good, that band wouldn't be the same without him/her!" Bass guitar too often just gets buried under the rest of the music. For me, a great bass player is one who makes you say that (above). One who helps MAKE the music, not just back it, nut just provide a template for it. When you not only NOTICE the bass, but it screams out loud that the bass is part of the reason the song is great...THAT is a great bass player.
I can only think of a couple who fit those criteria. The first is Fieldy, of Korn. His sloppy, clanky bass is a HUGE part of what made their early stuff distinctive. The fact that that part of their sound has died away in recent albums is disappointing aside from the fact that it detracts from what was the whole Korn package.
The second is John Entwistle. The Who would not have been the same without him. True R&B NEEDS a good bassist, and the Who is as "true R&B" as you get.
And honorable mention to CCR's Stu Cook. Another great blues band with a defining bassist.
