So I'm looking through my service maintenance log and noticed the oil change interval is 7500 miles, and a filter change every 15k. Nobody actually follows this, right?

That may be OK for highway only at 300 miles each turn of the engine, but you are looking at light duty cycle.

Look at heavy duty cycle (Schedule II?), which includes town idling and driving. Lots of posts on maintenance intervals. Read all by Q45tech if you really want to know.
