The car warms up fine and driving is fine. The problem is when I'm on the highway around 55mph+ the temp gauge drops down to cold. Up and down again depending on my throttle input but never above warm. I have enough coolant.

oh crap...I posted it in the wrong section. Should be Nissan not Infinite since it's a 96' 240sx

Check for a dirty corroded senso connector [single wire] with ground return.Why you always use a Scan tool to confirm what ecu is seeing and never trust inside display.
