I had an '89 Nissan Sentra with that same problem. Not sure if the 91 240sx has one, but my Sentra had a bad TPS (throttle positioning sensor/switch). It would idle way rough, bounce up and done, and sometimes just die when I took my foot off the gas. It's a 60-80 dollar fix.
honestly, before you replace anything, my best advice would be to get down to a mechanic and have him pull your codes, if any. the ****ty thing about the 240sx is the absence of a 'check engine' light. that **** really chaps my ***. anyway, see if a mechanic can pull some codes from your ecu. if there's ANYTHING related to throttle positioning sensor, idle air control valve, or EGR, my guess would be it's your TPS. ALL of those codes were pulled on my 89 sentra for a TPS problem.
