Engine job list?

I need to do an engine job for my nissan infiniti 2008. the engine is a VQ35HR. the car is consuming one quart of oil every 500 - 700 km. I was told by my mechanic that I need piston rings and bearings, gasket and seals. I want to buy these parts rather than going to a dealer. I am not sure if I have everything for the engine job on the list. can someone help me put the list together?

That is some serious oil consumption. Sorry to hear that.

Do you have a budget?
After buying these parts, are you doing the job yourself or are you having someone else do it?

I ask because some of the parts I would like to replace once I disassemble an engine enough to get to the pistons would be: intake gaskets, head gaskets, exhaust gaskets, thermostat, water pump maybe, water control valve if applicable, crankshaft seals, oil pump o-rings, PCV valve, valve cover gaskets, spark plugs, miscallenous gaskets, hoses and o-rings... and new crankshaft/rod bearings
In addition to that, I'd like to check the cylinder bores to make sure all my precious assembly effort doesn't go to waste. Now, you might have the capability to do it yourself, but if not, there is a labor cost to do a rebuild I bet.

I have not heard of too many newer vq35 engines with oil loss problems, but I know they're cheaper and more available. Might you have considered buying a complete engine?
