Was in the dealer's showroom while getting an oil change and wondered about the other 6 speeds (Altima, Sentra). Do they have the same minimal overdrive ratio as the Versa in 6th gear?

Nope.

Ratios are unique to the individual cars (the Versa and Sentra (non-SE-R) do share final drive, 1st, 2nd, and 4th gear ratios, though). The Sentra's 5th and 6th (both of which are overdrive in all 3 cars) are higher than the Versa's.

Of course all 3 cars have different engines and there are various tire heights amongst the 4 cylinder cars.

I guess what I should have said was: Is there a significant increase in overdrive, over and above that which the Versa has, in the other Nissan cars? The Versa has the typical, approx 25%, overdrive that most 5 speed cars have. A 6 speed should have an additional 20 to 25% over this.
