Pretty much any normal DIN-sized headunit (And that's almost all of them) will fit right into an S14. You'll need a wiring harness as well as an an antenna adapter for the dumb 2-wire Nissan setup, but you probably already knew that. The only thing you ought to be careful of is the trim piece around the headunit- it's easy to break if you don't unbolt it first so remove the trim around the shifter and aircon first. Also, if you go to an aftermarker headunit with a built-in amplifier (again, almost all of them) you'll probably want to remove the rubbish factory aplifiers under the rear deck- they interfere with sound quality and tend to go bad.
I'm not altogether sure what you're looking for as far as a stereo goes, but you don't have to look too far to find a new one that's both affordable and has an MP3 player input. Personally I like all the weird features that come on headunits today, especially the ones with a front SD card slot. Once you get used to using an SD card to transfer/store MP3s from your computer, CDs seem like a real cumbersome pain.
