so about 2 weeks ago, while driving my headlights would dim, dashlights dim, stereo would turn off. and if turned the car off while it was doing this i was unable to start it unless i jumped it. one night on my way home from work it died at a stop sign. had my friend come and jump me. took it home. tested the battery and it was dead. so i bought a new one, started right up. no lighs dimmed or anything. well just tonight while driving it started acting up again. could it be the alt not charging the battery enough.

i replaced my alt belt because it was in rough shape. i planned on replacing the alt this friday and hoping thats the problem. car is a 100% stock 89' with 87k original miles

Check the battery cables also. I had a similar problem and that fixed mine.

If you gave it a jump and it died again its probably the alternator not charging your battery.

How exactly would I check my battery cables? They look good and are tight??

And I'm thinking alternator or the voltage regulator.

Yup. It was my alternator. Changed the battery and it didn't help. Changed the alternator and it fixed the problem. Good luck!
