To make a note, the piston does not travel into the head. On our motors, it comes even to the block deck, and then it has a dish in it as well. When you're compressing air, you're taking a cylinder full of air and squeezing it into a smaller space. If you have a thicker headgasket, there's more space to squeeze into, making your ratio less. If your gasket is thinner, there's less space to squeeze into.
Years ago before the magizine really started to suck, Sport Compact Car had a multi-part installment called Suck, Squish, Bang, Blow. The first part of it covers the basics of engine function and how to futz around with aspects of it. You may want to give it a read if you can find it.
