Cooling question, 95 KA24de

I'm running a stock thermostat with a 195/180 degree fan switch. I'd like to run a step cooler but would I have problems with the 180 thermostat? I don't want to trick the computer into thinking the engine is still in warm up mode. I see Nismo sells a 165 but I'm not going that cold. I'll swap out the fan thermostat with a 180/165 if I can swap the engine thermostat.

I live in Phoenix, Arizona and it gets hot here. A few degrees cooler might stop that damed 3-5 pings when I first hit the gas from a light.
