Coolant Temperature Sensor?

Will the car start if the Coolant temperature sensor is unplugged? Or car will start but dies after a few minutes of driving? I'm having this problem with my car, when the car is running the car is great but for some reason it will just die intermittently.

Check for codes, yes the car will start and run.
