Coolant Temperature Gauge Irratic

I've had this issue for about a week now. The coolant temperature would rise to operating temperature then all of a sudden would drop to "C". But after a little while, it will go back up to normal operating temperature again. I just assumed that it was the gauge acting up.

However, just last night, the temperature gauge went up to H and so I became concerned. I turned the engine off, then tried again. Started the car and it went up to "H" again, but this time it went back to normal operating temperature after 3 minutes.

I'm leaning towards the coolant temperature sensor because it just doesn't make sense how the temperature would rise and drop so quickly. No thermostat would open and close so quickly that would lead to that I think.

If anyone can give me any guidance for replacing the temp sensor, that would be great. I can't really tell where it is based on the manuals.

I have this issue, but it only drops to C and has never gone above normal operating temperature. It usually happens when I get to a stop light and as soon as I hit the accelerator, the temp would go down to C and rise back to normal. Been happening for about a year and a half now. Since I've never seen it go above normal, I didn't really worry about it. Hopefully you get a better answer than this.
