sounds to me like your slave cyclinder is bad or your clutch fork is getting stuck, I am pretty sure thats your case, now what I want you to do is get your car up on jackstands, turn the car on, have someone step on your clutch pedal while you climb under the car and watch your slave cylinder. When the pedal is pushed in, the slave cyclinder should push the clutch fork forward, when off the pedal, the fork should return to its orginal position. if this doesn't happen that you need a new slave cylinder ( which is quick common, especially when you have your clutch system in for service) or something is in the way of the clutch fork. And just fyi, with most hydraulic clutch systems, your throw out bearing will actually ride against your pressure plate, if it was stuck, you would hear a terrible noise, like if a giraffe was dying haha
