You can bleed it if you haven't already. The process is real similar to bleeding brakes...also if its a puck clutch it'll be grabby by nature (just guessing by "stage 3") and if its not a sprung hub it'll also be much harder to manage. A lot of street/strip or race clutches tend to be 4 or 5 puck designs without sprung hubs, and they bite hard, as they should, they're made to deal with a lot of power.
Personally I'd second guess the clutch play issue, I've not heard of that causing hard grabs, although I have heard of people installing clutches and not resetting the cam at the clutch pedal, which causes the clutch to bite very early in pedal release, though I couldn't help ya with resetting the cam on that particular car, or even if it needs to be, some are designed to do it on their own.
In the end, best bet is to take it to someone you trust. Shell out the money, sure, but you only have to do it once.
