For sugar, wax, gum, etc... Use a steam cleaner and immediately vacuum thoroughly to remove as much moisture as possible. Try to leave windows open for several hours after. Bissel makes a great steam cleaner that has a built-in vacuum for around $100. I intend to clean all my upholstery this spring with one of those...
The foam shampoos you see at auto parts stores work well, but they leave a residue in the upholstery indefinitely. Almost impossible to remove without a steam cleaner. But they do work when vacuumed afterwards.
If you go for the shampoo, I recommend Blue Coral carpet cleaner, or TurtleWax shampoo in the GREEN can. The RED can leaves a very obnoxious odor in the car after a few days.
