I'd inspect your throttle cable, make sure there are not kinks or anything. Also make sure your floor mat isn't catching under the throttle, I've had that happen plenty of times and luckily all times have been with a relatively slow car.
Oil pressure wise, the oil pressure will vary with temperature as the viscosity of the oil changes. If anything is wrong though, its probably the oil pressure sensor. If it didn't have regular oil changes throughout its life its possible that it could be gummed up and not showing the correct oil pressure.
Usually gauges aren't much of a problem and I've not heard of many oil pump failures so that just leaves the sensor.
