A/C is a point of some debate... if the system is well sealed, it shouldn't get moisture build-up. Moisture in the system will cause acid, which eats away at the system's components, etc. In a mobile environment, with vibrations, etc. it's hard to keep everything sealed perfectly.
I'd say have it flushed and a new drier put in after you buy it (as maxnix suggested) and see what happens. My A/C still works well on "Q1" and it's 11+ years old (compressor was replaced at about 30K for an update) at 190K - and that's with very little maintenence.
Just keep in mind that ANY car you buy used will have some issue you'll want to address, and things will break. The goal is to find one with most of the major issues already addressed, or at least know what you're getting into. Assuming Matt's car hasn't had any paint or body work done to it, it looks like the best thing going in that price range.
